A very good basic marina and pizza sauce.
Jim’s Marina Sauce
Simple but good as a basic marina or a pizza sauce
Equipment
- Food Processor
Ingredients
Group 1
- 2 14.5 oz cans Stewed Tomatoes
- 1 6 oz can Tomato paste
- 4 tbls Chopped Fresh Parsley
- 2 Cloves Garlic, Minced
- 1 tsp Dried Oregano
- 1 tsp Salt to taste
- 1/4 tsp Black Pepper to taste
- 1 tsp Dried Basil
- 1/4 tsp Red Pepper to taste
Group 2
- 6 tbls Olive Oil
- 1/3 cup Onion, finely diced
Group 3
- 1/2 cup White wine
- 1/4 tsp White Sugar If needed, to cut the acid from the tomatoes
Instructions
- In a food processor, add the group 1 ingredients, and blend until smooth
- In a large skillet, sauté the onions in the olive oil for 2 minutes
- Add the group 1 results and the white wine
- Simmer for 30 minutes, stirring occasionally – Add the sugar if needed
- If using for pizza sauce, use a hand blender to break up the onions and make it smoother
